Dulce de Leche Cupcakes

Oh my goodness, I have got to try these! I bet these would be yummy with a hot cup of coffee!

Today I baked for the first time this week! I am recovering from a kidney infection which has caused a flare up in my arthritis symptoms. I have struggled to think about cakes and definitely haven’t had the energy to stand in the kitchen baking. My appetite has been poor and my diet has been mainly toast!

This morning I was feeling less sickly and could face looking at recipes again. I spotted one for Dulce de Leche cakes and really wanted one. Pleased that my appetite was returning I put a can of condensed milk in a pan of boiling water and left it for 1 and a half hours.

IT’S TRUE! I made 75 of these cupcakes as well as a matching cake for a birthday last week! Nutella is always a popular pick, so i was happy to experiment and design some cakes incorporating the beloved spread. I was more than happy with how all the cakes turned out, each one was different and apparently “These taste like watching the finales of all your favourite TV shows at once.” These cupcakes are actually really easy, so luckily i am willing to share these tasty and groovy cakes with you!

This recipe has been my go to chocolate cake and cupcake recipe for years. It’s very chocolatey and extremely moist and everyone loves it. Most hesitate to ask me for the recipe, thinking it’s a huge family secret that I won’t want to give up. Little did they know it was practically under their noses, in their pantry, right there on the Hershey Cocoa box. Pair it with any frosting; vanilla, chocolate or cream cheese and it will never disappoint. It is truly “Perfectly Chocolate” cake.

Here’s my perfectly chocolate cupcake, all dressed up for Valentine’s Day.

2 cups sugar
1- 3/4 cups all-purpose flour
3/4 cup Hershey’s Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda

Meringue. This is an excellent recipe except for the meringue. I’m not sure what it is but I just can’t make a proper stiff meringue that lasts more than an hour. Nevertheless, enjoy this camp fire treat in cupcake form.

Ingredients:

Crust:

  • 3/4 cup graham cracker crumbs
  • 2 & 1/2 tablespoons salted butter, melted
  • 1/8 cup granulatedsugar
  • 4.5 ounces semisweet chocolate chips, chopped

Cupcake Batter:

  • 1 cup flour
  • 1/4 & 1/8 cups & 1/2 teaspoon cocoa powder
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 & 1/8 cups & 1 tablespoon granulated sugar
