Dulce de Leche Cupcakes

Oh my goodness, I have got to try these! I bet these would be yummy with a hot cup of coffee!

Today I baked for the first time this week! I am recovering from a kidney infection which has caused a flare up in my arthritis symptoms. I have struggled to think about cakes and definitely haven’t had the energy to stand in the kitchen baking. My appetite has been poor and my diet has been mainly toast!

This morning I was feeling less sickly and could face looking at recipes again. I spotted one for Dulce de Leche cakes and really wanted one. Pleased that my appetite was returning I put a can of condensed milk in a pan of boiling water and left it for 1 and a half hours.

Then I made some chocolate cupcakes and some Dulce de Leche buttercream. When the cakes had cooled I cut a hole in the top and filled the cake with a teaspoon of Dulce de Leche then piped the buttercream…

Meringue. This is an excellent recipe except for the meringue. I’m not sure what it is but I just can’t make a proper stiff meringue that lasts more than an hour. Nevertheless, enjoy this camp fire treat in cupcake form.



  • 3/4 cup graham cracker crumbs
  • 2 & 1/2 tablespoons salted butter, melted
  • 1/8 cup granulatedsugar
  • 4.5 ounces semisweet chocolate chips, chopped

Cupcake Batter:

  • 1 cup flour
  • 1/4 & 1/8 cups & 1/2 teaspoon cocoa powder
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 & 1/8 cups & 1 tablespoon granulated sugar
  • 1/3 cup boiling water


  • 3 eggs
  • 3/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 3/4 teaspoon vanilla extract

Easy and quite yummy.  Give it a go!  Salted Caramel Cupcakes:

Salted Caramel:

2 cups sugar
12 tablespoons salted butter cubed
1 1/4 cups heavy cream, at room temp

In a large pot, melt the sugar over medium high heat, whisking constantly until the sugar becomes brown. Add the butter and stir until melted. Pour in the heavy cream (it will foam) and whisk until smooth. Stir until you have no remaining lumps. Remove from heat and let cool.

I have tried this recipe using various cakes.  I find that a good old white cake sets off the caramel taste beautifully. 


Your favorite white cake box mix or recipe.  I am crunched for time as I finish up my masters degree so I have turned to box mixes and no one seems to have noticed.  Who knew!
