Our recent Food Mingle Blog Poll asked about your favorite traditional Irish food. With over 46% of the votes, THE WINNER IS: Corned Beef and Cabbage!

Many Corned Beef and Cabbage recipes call for a long and tedious brining process. This recipes uses a spice paste in place of a longer brine.  Now you can make this traditional St. Patrick’s Day meal any day of the year, without worrying about planning ahead for three days!

I am not a corned beef lover, but it is nice to have this dish once a year to celebrate the “wearin’-o-the green.”

Chocolate Pretzel Shamrock Pops

I could totally see myself taking these to the next level and making them all green, because I am crazy like that. But, what a cute idea for getting the shamrock shape in a pretzel pop and you gotta love the sweet and salty together!

Chocolate Pretzel Shamrock Pops

It will soon be St. Patrick’s Day, and I couldn’t let it pass without making a fun treat.  These Chocolate Pretzel Shamrock Pops are about as easy and cute as it comes.  I simply placed three mini pretzels and a cookie pop stick on a piece of parchment paper, spooned about a teaspoon of melted chocolate in the center, and placed a green Mint Dark Chocolate M&M in the center.  Let it cool/dry for about 5-10 minutes, and voila – a fun St. Patrick’s day treat.

Dulce de Leche Cupcakes

Oh my goodness, I have got to try these! I bet these would be yummy with a hot cup of coffee!

Today I baked for the first time this week! I am recovering from a kidney infection which has caused a flare up in my arthritis symptoms. I have struggled to think about cakes and definitely haven’t had the energy to stand in the kitchen baking. My appetite has been poor and my diet has been mainly toast!

This morning I was feeling less sickly and could face looking at recipes again. I spotted one for Dulce de Leche cakes and really wanted one. Pleased that my appetite was returning I put a can of condensed milk in a pan of boiling water and left it for 1 and a half hours.

Then I made some chocolate cupcakes and some Dulce de Leche buttercream. When the cakes had cooled I cut a hole in the top and filled the cake with a teaspoon of Dulce de Leche then piped the buttercream…

Why the name “Cameo” Party Designs?

In Memory of Cameron Mitchell Roberts  {Born Unto Earth ~ Entered Into Heaven,  November 1st, 2009}

“Cameo”:  In 2009 we lost someone very very precious to us…  Our son, Cameron Mitchell Roberts.

Cameron was full term, and Halloween night, the weekend before they were going to induce labor, he got wrapped in his umbilical chord.  By the time that we made it to the hospital it was just too late.  Cameron was a very beautiful lil’ man and is in our hearts, thoughts and prayers always.

My nickname for Cameron is “Cam”… which immediately made me think of “Cameo”.   Cam played his own version of a “cameo role” in our lives, here and gone so quickly. I truly believe, Cameron is now our own personal shining star and lil’ angel watching over us.

…and the meaning doesn’t stop there

Another reason that I chose this name is: if you break down the letters of “Cameo” you get the initials of all of my children’s names:

C: Cameron
A: Abigale
M: Madison
E: Elizabeth
O: Lots of Hugs (XOs) and of course kisses!

The third and final reason is that using an object like a Cameo lended itself to the more elegant look I was wanting!

So you see, the name “Cameo” just had to be, on so many levels.  The name means so very much to me.  I am proud, and hope I make my children proud daily, that the job that I do helps to bring smiles on the faces of children & others all over the world.  Getting to be a part of their special day, holiday or event, is very heart warming.  Even with the pain always in my heart, Cameo Party Designs and the meaning behind it, makes me smile on a daily basis.

IT’S TRUE! I made 75 of these cupcakes as well as a matching cake for a birthday last week! Nutella is always a popular pick, so i was happy to experiment and design some cakes incorporating the beloved spread. I was more than happy with how all the cakes turned out, each one was different and apparently “These taste like watching the finales of all your favourite TV shows at once.” These cupcakes are actually really easy, so luckily i am willing to share these tasty and groovy cakes with you!
